I have had a craving for frozen yogurt for about a week. So we stopped by TCBY ( The Country’s Best Yogurt ) to grab some. I got vanilla soft serve with dark chocolate chunks and peanut butter cups in it. It was Delish!
I wish we had one closer because it was a 15 minute drive just to get there. It was worth it though! They had so many toppings to choose, from banana’s to gummy bears. Next time I gotta try banana’s and whipped cream…. and chocolate.
Yay! Friday is here! We are putting up our Christmas decorations this weekend. It doesn’t feel right though, usually there is already lots of snow on the ground. I hope this isn’t going to be a dry winter like the last one. Snow is one of my favorite parts of winter. There is so much to do with it! Ice skate, ski, snowshoe.
I hope it will this weekend, I refuse to believe the forecasts that say its going to be 50 degrees and rainy. I think they predicted about 20 degrees to high and its really going to snow, not rain :).
Okay so I am kinda obsessed with smoothies right now. They are the perfect snack, or meal because they are filling and delicious! So I have a new smoothie recipe for you, peanut butter and jelly! The two fit together perfectly on bread, so why not in a smoothie?

Peanut Butter and Jelly Smoothie
3\4 cup almond milk
handful of frozen berries
handful of non-frozen berries
1 tablespoon or more peanut butter
4 tablespoons greek yogurt of choice
1 packet truvia
Blend all ingredients in blender and pour into a cup or bowl. Its that easy! 🙂
Today is going by so fast. I feel like I just woke up but I have already gone to school and completed my run for today. I went a full 1.5 miles without stopping at an average pace of 7mph. It was a beautiful day, although I am hoping there will be snow on the ground soon.
I was experimenting with my blender after a and I discovered The best smoothie EVER! I put a banana in the freezer this morning planning to make a banana coconut smoothie. When I opened the fridge to get the coconut milk, a box a raspberries caught my eye. So I threw in a handful of those, a splash of almond milk a spoonful of peanut butter, a sprinkling of flax and this was born…
That right there is the best smoothie I have ever tasted. You should go get your blender and make this right now and then you will see how amazing this smoothie really is.

Blend all ingredients together and Enjoy!
Imagine eating cake…..for breakfast! Okay so its not triple chocolate fudge cake, but its close enough! I had two cakes topped with peanut butter and syrup with a banana on the side before heading off to school. They lived only another 2 seconds after I took the picture. 🙂
Baked Oatmeal Cakes
Preheat oven to 400 degrees. In a medium bowl combine all ingredients and stir well. Spoon into a greased muffin pan and bake 35-40 minutes. Allow to cool and serve hot or refrigerate them overnight. Top with whatever toppings you like! These would also taste mixing fruit or nuts into the batter.
My new favorite lunch is grilled sandwiches on Flat Out bread. I got the rosemary olive oil kind last week and I love them! They are way better than regular bread and I like mine with ham ( the vegetarian kind of course 😉 provolone cheese, spinach and mustard.
With my lunch I had leftover tuna casserole, baby carrots and a sugar cookie my grandma brought for Thanksgiving. It was filling and the cookie made it 10 times better!
On new years day I am going to run in the Sargent Preston Run. This will be my first running race so I am thinking about doing the 5k. I going to run everyday starting with 1 mile and going farther everyday. I am new to running so I won’t be running 5 miles right away. I am exited for the race but I have a lot of work to do before then!
Back to reality today. Its nice to be eating healthy again this week :). I am exited to share with you my very first recipe, Banana Coconut Smoothie! I also have a wonderful addition to my posts…
The picture quality will get better I promise :), but that is a banana coconut smoothie! It has a thicker texture so you can drink it or eat it with a spoon.
Banana Coconut Smoothie
- 1 cup ( more or less depending on your preference) coconut milk (regular milk works too.)
- 1 tbsp peanut butter
- 1\2 frozen banana
- 1 stevia packet (or 1 tbsp sugar)
- 1 cup greek yogurt (I used plain)
Combine all ingredients into blender and blend. Super easy and you probably have all the ingredients already. I enjoyed this with a bowl of popcorn before heading off for a run.

I am still figuring out some things so no pictures yet. 😦 This morning was not what you would call a healthy day but its thanksgiving! I started my day with homemade cinnamon rolls. My favorite! And just finished a thanksgiving feast of spaghetti squash, corn casserole, and stuffing! I had seconds of everything!! Pumpkin pie is next!
